These gluten-free buttermilk pancakes are a game-changer for anyone missing a classic, cozy breakfast. Designed to be 100% safe for celiac or gluten-sensitive readers, they offer a thick, ‘melt-in-your-mouth’ texture with bursts of jammy, cooked blueberries in every bite.

Ingredients

  • 2 cups Gluten-Free All-Purpose Flour Blend (with xanthan gum)
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 cups buttermilk (or milk with 1 tbsp lemon juice)
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups fresh or frozen blueberries

Instructions

  1. Prepare Dry Ingredients: In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt until no lumps remain.
  2. Mix Wet Ingredients: In a separate bowl, whisk the eggs, then add buttermilk, melted butter, and vanilla. Mix until smooth.
  3. Combine and Rest: Pour wet ingredients into dry. Stir gently with a spatula—small lumps are okay. Crucial Step: Let the batter sit for 5-10 minutes to allow the flour to hydrate and prevent a gritty texture.
  4. Heat and Pour: Heat a greased non-stick skillet over medium heat. Pour 1/4 cup of batter per pancake. Drop blueberries onto the wet batter for the best ‘melted’ effect.
  5. Flip and Cook: Cook for 3-4 minutes until bubbles form. Flip carefully; the berries will release their juices. Cook for 2-3 more minutes until golden brown.
  6. Serve: Keep warm in a 200°F oven until ready to serve with butter and maple syrup.

Notes

If your flour blend doesn’t include xanthan gum, add 1/2 teaspoon to the dry mix. For a dairy-free version, swap buttermilk for dairy-free milk with apple cider vinegar and use coconut oil. To avoid raw centers, ensure the heat is on medium-low if the outsides brown too quickly.
