Ingredients

  • 2 cups (280g) certified gluten-free all-purpose flour blend (with xanthan gum)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 3/4 cup plain Greek yogurt (or dairy-free yogurt)
  • 2 tablespoons olive oil
  • 1/4 cup warm water (plus more if needed)
  • Garlic Butter: 2 tablespoons melted butter, 1 tablespoon olive oil, 2 garlic cloves minced, 1 tablespoon chopped parsley
  • Optional: 1/4 cup shredded mozzarella, Parmesan cheese, Italian seasoning, chili flakes

Instructions

  1. Mix Dry Ingredients: In a large bowl whisk together the gluten-free flour, baking powder, baking soda, salt, garlic powder, parsley, dill, and chives.
  2. Add Wet Ingredients: Stir in the Greek yogurt, olive oil, and warm water until a soft dough forms. Add an extra tablespoon of water if needed.
  3. Rest the Dough: Cover and let the dough rest for 20 minutes so the gluten-free flour fully hydrates.
  4. Shape: Divide into 6 equal pieces and roll each into a 6-inch round about 1/4-inch thick. Use parchment paper if the dough is sticky.
  5. Cook: Heat a lightly oiled skillet over medium heat. Cook each flatbread for 2-3 minutes per side until golden brown with light charred spots.
  6. Prepare Garlic Butter: Mix melted butter, olive oil, garlic, and parsley. Brush generously over the warm flatbreads before serving.
