Ingredients

  • 3 cups (420g) certified gluten-free all-purpose flour blend (with xanthan gum)
  • 2 teaspoons instant yeast
  • 2 tablespoons granulated sugar
  • 1 teaspoon fine salt
  • 1 teaspoon baking powder
  • 1 cup (240ml) warm milk (or certified gluten-free oat milk for dairy-free)
  • 2 large eggs, room temperature
  • 1/4 cup (60ml) vegetable oil
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon melted butter or dairy-free butter (for brushing)
  • 1 egg + 1 tablespoon water for egg wash (optional)
  • Sesame seeds or poppy seeds for topping (optional)

Instructions

  1. Prepare the Oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the gluten-free flour, yeast, sugar, salt, and baking powder.
  3. Add the Wet Ingredients: Add the warm milk, eggs, vegetable oil, and apple cider vinegar. Mix for about 5 minutes until a smooth, sticky dough forms.
  4. Shape the Buns: Lightly oil your hands and divide the dough into 6 equal portions. Shape each into a hot dog bun about 6 inches long and place on the prepared baking sheet.
  5. Let Rise: Cover loosely and allow the buns to rise for 45-60 minutes in a warm place until puffy.
  6. Bake: Brush with egg wash if using and sprinkle with sesame seeds. Bake for 22-25 minutes until golden brown.
  7. Finish: Brush warm buns with melted butter and cool on a wire rack before slicing. Enjoy with your favorite gluten-free hot dogs or sandwiches.

Notes

Always use certified gluten-free ingredients to avoid cross-contamination. Gluten-free dough is softer and stickier than traditional dough, so avoid adding extra flour. These buns freeze beautifully for up to 3 months and reheat well in the oven or microwave.
