Ingredients

  • 2 cups (280g) certified gluten-free all-purpose flour blend (with xanthan gum)
  • 1 teaspoon gluten-free baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 cup (250g) whole milk ricotta cheese
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract (optional)
  • 1 teaspoon fresh lemon zest
  • ½ cup certified gluten-free powdered sugar, for dusting

Instructions

  1. Preheat the Oven: Heat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix Dry Ingredients: Whisk together the gluten-free flour, baking powder, baking soda, and salt.
  3. Cream Butter and Sugar: Beat softened butter and sugar until light and fluffy, about 3 minutes.
  4. Add Wet Ingredients: Beat in the egg, ricotta cheese, vanilla extract, almond extract (if using), and lemon zest until smooth.
  5. Combine: Gradually stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Scoop: Drop about 2 tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
  7. Bake: Bake for 13–15 minutes or until the bottoms are lightly golden and the tops are set.
  8. Cool and Finish: Let cookies cool for 5 minutes on the baking sheet before transferring to a wire rack. Once completely cool, dust generously with gluten-free powdered sugar before serving.
