Ingredients

  • 2 cups (280g) certified gluten-free all-purpose flour blend (with xanthan gum)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 2 large eggs
  • 1 cup plain Greek yogurt (or dairy-free yogurt)
  • ¼ cup olive oil
  • 2 tablespoons milk (or dairy-free milk)
  • Garlic Butter:
  • ¼ cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ½ teaspoon Italian seasoning
  • 2 tablespoons grated Parmesan cheese (optional)
  • ½ cup shredded mozzarella (optional)

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. Mix Dry Ingredients: In a large bowl whisk together the gluten-free flour, baking powder, baking soda, salt, and sugar.
  3. Mix Wet Ingredients: In another bowl whisk together the eggs, Greek yogurt, olive oil, and milk until smooth.
  4. Make the Batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  5. Bake: Spread the batter evenly into the prepared pan and bake for 22–25 minutes until lightly golden and a toothpick comes out clean. Cool for 10 minutes.
  6. Prepare Garlic Butter: Stir together melted butter, garlic, parsley, garlic powder, onion powder, salt, Italian seasoning, and Parmesan if using.
  7. Finish the Bread: Brush the warm bread generously with the garlic butter. Sprinkle mozzarella over the top if desired.
  8. Broil: Broil for 2–3 minutes until the cheese melts and the edges are lightly golden. Slice and serve warm.
