These Easy Gluten-Free Almond Cookies are buttery, soft in the center, and lightly crisp around the edges. Ingredients

  • 2 cups (200g) certified gluten-free almond flour
  • 1/2 cup (70g) certified gluten-free all-purpose flour blend (with xanthan gum)
  • 1/2 teaspoon certified gluten-free baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract
  • 2 tablespoons milk (or dairy-free milk)
  • 1/4 cup sliced almonds
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together almond flour, gluten-free flour blend, baking powder, and salt.
  3. Cream Butter and Sugars: Beat butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
  4. Add Wet Ingredients: Mix in the egg, vanilla extract, almond extract, and milk until smooth.
  5. Combine: Slowly add the dry ingredients to the wet mixture and stir until a soft dough forms. Chill for 20 minutes if needed.
  6. Shape the Cookies: Scoop about 1½ tablespoons of dough, roll into balls, flatten slightly, and top with sliced almonds and coarse sugar.
  7. Bake: Bake for 12–14 minutes until the edges are lightly golden.
  8. Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Always use certified gluten-free ingredients to prevent cross-contamination. Do not overbake the cookies—they continue to set as they cool. Store in an airtight container for up to 5 days or freeze for up to 3 months.
