This Easy Gluten-Free Angel Food Cake is incredibly light, fluffy, and perfectly sweet. Made with certified gluten-free flour and whipped egg whites, this classic dessert is naturally low in fat and topped with fresh berries and whipped cream for a beautiful finish. Ingredients

  • 1 cup (120g) certified gluten-free all-purpose flour with xanthan gum
  • 1/4 cup (30g) certified gluten-free cornstarch
  • 1 1/2 cups (300g) superfine granulated sugar, divided
  • 12 large egg whites, room temperature
  • 1 1/2 teaspoons cream of tartar
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • Whipped cream for serving
  • Fresh strawberries, raspberries, blackberries, and blueberries

Instructions

  1. Prepare the Oven: Preheat oven to 350°F (175°C). Do not grease a 10-inch angel food cake pan.
  2. Mix Dry Ingredients: Whisk together the gluten-free flour, cornstarch, and half of the superfine sugar until well combined.
  3. Whip Egg Whites: Beat egg whites with lemon juice until foamy. Add cream of tartar and continue beating until soft peaks form. Gradually add the remaining sugar and beat until stiff glossy peaks form.
  4. Add Flavor: Mix in the vanilla and almond extract.
  5. Fold Batter: Sift the flour mixture over the egg whites in four additions, folding gently after each addition until just combined.
  6. Bake: Spoon the batter into the ungreased tube pan. Bake for 38–42 minutes until golden and the top springs back when touched.
  7. Cool: Immediately invert the pan and cool completely for 1½–2 hours before removing the cake.
  8. Serve: Slice with a serrated knife and serve with whipped cream and fresh berries.

Notes

Always use certified gluten-free ingredients to prevent cross-contamination. Make sure your mixing bowl is completely grease-free for the egg whites to whip properly. Do not grease the pan, and always cool the cake upside down to prevent collapsing.
