Ingredients

  • 1 teaspoon pure vanilla extract
  • 1 tablespoon maple syrup (optional)
  • 3/4 cup fresh blueberries
  • Butter or cooking spray for greasing the pan

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C). Grease a jumbo 6-cup muffin pan or a standard 12-cup muffin pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the gluten-free flour, baking powder, and salt.
  3. Blend Wet Ingredients: In a blender or mixing bowl, combine eggs, cottage cheese, milk, melted butter, vanilla, and maple syrup until smooth.
  4. Combine Batter: Add the dry ingredients to the wet mixture and stir gently until just combined. Do not overmix.
  5. Fold in Blueberries: Carefully fold the blueberries into the batter using a spatula.
  6. Fill the Muffin Pan: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  7. Bake: Bake for 25-28 minutes or until puffed, golden brown, and a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the popovers to cool for 5 minutes before removing from the pan. Serve warm with fresh berries, maple syrup, or a light dusting of powdered sugar.
