Ingredients

  • 2½ cups (350g) certified gluten-free all-purpose flour blend (with xanthan gum)
  • 2 teaspoons instant yeast
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 cup (240ml) warm milk
  • 1 large egg, room temperature
  • 1 teaspoon apple cider vinegar
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons grated Parmesan cheese (optional)
  • ¼ teaspoon salt

Instructions

  1. Prepare the Dough: In a large bowl, whisk together the gluten-free flour, yeast, sugar, salt, baking powder, and garlic powder.
  2. Add Wet Ingredients: Pour in the warm milk, olive oil, egg, and apple cider vinegar. Mix for about 5 minutes until a soft, sticky dough forms.
  3. Let Rise: Cover the bowl and let the dough rest in a warm place for 30 minutes until slightly puffy.
  4. Shape the Knots: Divide the dough into 12 equal pieces. Roll each into a 6-inch rope and tie into a simple knot. Place on a parchment-lined baking sheet.
  5. Bake: Bake in a preheated 375°F (190°C) oven for 18–20 minutes until lightly golden.
  6. Make Garlic Butter: Mix melted butter, minced garlic, parsley, Parmesan, and salt.
  7. Finish: Brush the warm garlic knots generously with garlic butter and serve immediately.
