Ingredients

  • 2 large eggs
  • 1¼ cups milk (or gluten-free dairy-free milk)
  • 2 tablespoons melted butter
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1½ cups cottage cheese or ricotta cheese
  • 4 oz cream cheese, softened
  • 3 tablespoons powdered sugar
  • 1 teaspoon lemon zest
  • ½ cup heavy cream
  • ¼ cup sweetened condensed milk
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest
  • Powdered sugar and extra orange zest for garnish (optional)

Instructions

  1. Prepare the Batter: Whisk together gluten-free flour, poppy seeds, sugar, and salt. Add eggs, milk, melted butter, and vanilla until smooth. Let rest for 20 minutes.
  2. Cook the Crepes: Heat a lightly greased nonstick skillet over medium heat. Pour about ¼ cup batter into the pan, swirl to coat, cook 1½ minutes, flip, and cook another 30–45 seconds.
  3. Make the Filling: Beat together cottage cheese, cream cheese, powdered sugar, vanilla, and lemon zest until creamy.
  4. Prepare the Citrus Sauce: Whisk heavy cream, sweetened condensed milk, orange juice, and orange zest until smooth.
  5. Assemble: Spread about 3 tablespoons of filling onto each crepe and fold into triangles or roll into logs.
  6. Serve: Spoon citrus cream sauce over the crepes and garnish with powdered sugar and fresh orange zest.
