This Soft Gluten-Free Potato Lefse Recipe is a delicious twist on the classic Scandinavian flatbread. Made with creamy mashed potatoes and certified gluten-free flour, these tender, flexible rounds are perfect for sweet or savory fillings. Easy to make and naturally comforting, this recipe is ideal for holidays, family meals, or everyday breakfasts.

Ingredients

  • 2 cups cold mashed potatoes
  • 1/4 cup unsalted butter, softened
  • 1/4 cup heavy cream
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar (optional)
  • 1 1/4 cups certified gluten-free all-purpose flour blend (with xanthan gum)
  • 1/4 cup certified gluten-free potato starch
  • Extra gluten-free flour for rolling

Instructions

  1. Prepare the Dough: In a large bowl, combine mashed potatoes, butter, cream, salt, and sugar until smooth.
  2. Add Dry Ingredients: Mix in the gluten-free flour blend and potato starch until a soft dough forms.
  3. Chill: Cover and refrigerate the dough for at least 1 hour.
  4. Roll: Divide into 8 portions and roll each into a thin 8-10 inch circle on a lightly floured surface.
  5. Cook: Heat a dry skillet over medium-high heat. Cook each lefse for 1-2 minutes per side until golden brown spots appear.
  6. Serve: Stack cooked lefse under a clean towel to keep soft. Serve warm with butter, cinnamon sugar, jam, smoked salmon, or your favorite fillings.

Notes

Always use certified gluten-free ingredients to prevent cross-contamination. Chill the dough well before rolling for easier handling. Cover finished lefse with a towel immediately after cooking to keep them soft and flexible. Leftovers freeze beautifully for up to 3 months.
