Ingredients

  • 2 cups (220g) certified gluten-free vanilla cookies or gluten-free ladyfingers, finely crushed
  • 8 oz (225g) mascarpone cheese, softened
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (50g) powdered sugar
  • 2 tablespoons cooled brewed espresso or strong coffee
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 tablespoon heavy cream (if needed)
  • 1/3 cup certified gluten-free unsweetened cocoa powder for coating
  • 2 tablespoons finely grated dark chocolate (optional)

Instructions

  1. Crush the Cookies: Blend the gluten-free cookies into fine crumbs using a food processor or crush them in a zip-top bag with a rolling pin.
  2. Prepare the Filling: Beat together mascarpone cheese, cream cheese, powdered sugar, vanilla extract, and almond extract until smooth.
  3. Add Coffee: Mix in the cooled espresso until fully combined.
  4. Combine: Fold the cookie crumbs into the cheese mixture. If needed, add heavy cream until the mixture is soft but holds together.
  5. Chill: Refrigerate the mixture for 30 minutes to make rolling easier.
  6. Roll: Scoop about one tablespoon of mixture and roll into bite-sized balls.
  7. Coat: Roll each ball in certified gluten-free cocoa powder until evenly coated.
  8. Chill Again: Refrigerate for another 30 minutes before serving. Garnish with grated dark chocolate if desired.

Notes

Always use certified gluten-free cookies and cocoa powder to avoid cross-contamination. Chill the mixture well before rolling for the best texture. These tiramisu balls taste even better after resting overnight in the refrigerator and freeze beautifully for up to 2 months.
