These Soft & Fluffy Gluten-Free Pull Apart Dinner Rolls are light, buttery, and perfectly tender with a golden crust. Ingredients

  • 3½ cups (420g) certified gluten-free all-purpose flour blend (with xanthan gum)
  • 2 teaspoons instant yeast
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon fine sea salt
  • 2 tablespoons psyllium husk powder
  • 1 cup (240ml) warm whole milk
  • ¼ cup (60ml) warm water
  • ¼ cup (56g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon melted butter (for brushing)
  • Optional: flaky sea salt, chopped parsley, garlic powder, shredded cheddar, or fresh herbs

Instructions

  1. Prepare the Yeast: In a large bowl, combine the warm milk, warm water, sugar, and instant yeast. Let sit for 5 minutes until slightly foamy.
  2. Mix Wet Ingredients: Add the melted butter, eggs, and apple cider vinegar. Whisk until well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the gluten-free flour blend, psyllium husk powder, and salt.
  4. Make the Dough: Gradually mix the dry ingredients into the wet ingredients. Beat for 5–7 minutes until a thick, sticky dough forms.
  5. First Rise: Cover the bowl and let the dough rise in a warm place for about 1 hour or until puffy.
  6. Shape the Rolls: Grease a 9-inch round baking pan. Divide the dough into 8 equal pieces, shape into balls with lightly oiled hands, and arrange them in the pan.
  7. Second Rise: Cover and let the rolls rise for 15–20 minutes while preheating the oven to 375°F (190°C).
  8. Bake: Bake for 22–25 minutes until golden brown and cooked through.
  9. Finish: Brush the hot rolls with melted butter and let cool for 10 minutes before serving warm.

Notes

Always use certified gluten-free ingredients to avoid cross-contamination. Gluten-free dough should be sticky, not dry, so avoid adding extra flour. Psyllium husk helps create a soft, fluffy texture that closely resembles traditional dinner rolls. Store leftovers in an airtight container or freeze for up to 3 months.
