Ingredients

  • 2¼ teaspoons (7g) instant yeast (1 packet)
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 cup (240ml) warm milk (110°F/43°C)
  • 2 large eggs, room temperature
  • ¼ cup (60g) unsalted butter, melted
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon melted butter (for brushing)
  • Optional: flaky sea salt, sesame seeds, garlic powder, Italian herbs, or shredded cheddar cheese

Instructions

  1. Mix the Dry Ingredients: In a large mixing bowl, whisk together the gluten-free flour, instant yeast, sugar, and salt.
  2. Add the Wet Ingredients: Pour in the warm milk, eggs, melted butter, and apple cider vinegar. Beat using a stand mixer with a paddle attachment for about 5 minutes, or mix vigorously by hand until smooth. The dough will be sticky.
  3. First Rise: Cover the bowl with plastic wrap or a clean towel. Let the dough rise in a warm place for 45–60 minutes until puffy.
  4. Shape the Rolls: Lightly oil your hands and divide the dough into 8 equal portions. Roll each into a smooth ball and place them in a greased 9-inch baking pan or on a parchment-lined baking sheet.
  5. Second Rise: Cover the rolls loosely and let them rise for another 20–30 minutes while preheating the oven to 375°F (190°C).
  6. Bake: Bake for 22–25 minutes or until the tops are lightly golden and the rolls sound hollow when tapped.
  7. Finish: Brush the warm rolls with melted butter and allow them to cool for 10 minutes before serving.
