Ingredients

  • 3 cups (420g) certified gluten-free all-purpose flour blend (with xanthan gum)
  • 2 teaspoons instant yeast
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon fine salt
  • 1 cup (240ml) warm milk (110°F/43°C)
  • 2 large eggs, room temperature
  • ¼ cup (60ml) vegetable oil
  • 1 teaspoon apple cider vinegar
  • 1 egg + 1 tablespoon water (for egg wash)
  • 1 tablespoon white sesame seeds
  • 1 teaspoon black sesame seeds
  • 1 teaspoon poppy seeds (optional)

Instructions

  1. Prepare the Dry Ingredients: In the bowl of a stand mixer, whisk together the gluten-free flour, instant yeast, sugar, baking powder, and salt.
  2. Add Wet Ingredients: Pour in the warm milk, eggs, vegetable oil, and apple cider vinegar. Mix using the paddle attachment on medium speed for about 5 minutes until a smooth, sticky dough forms.
  3. Shape the Dough: Divide the dough into 8 equal portions. With lightly oiled hands, shape each portion into a smooth ball and place onto a parchment-lined baking sheet about 2 inches apart.
  4. Proof: Cover loosely with plastic wrap or a clean towel. Let rise in a warm place for 45–60 minutes until puffy.
  5. Prepare for Baking: Preheat the oven to 375°F (190°C). Whisk together one egg and one tablespoon of water. Brush each bun gently with the egg wash before sprinkling with sesame seeds and poppy seeds.
  6. Bake: Bake for 22–25 minutes or until the tops are beautifully golden brown and the internal temperature reaches about 200°F (93°C).
  7. Cool: Transfer the buns to a wire rack and allow them to cool for at least 20 minutes before slicing. This helps the crumb finish setting and prevents gumminess.
